It is a question of weight. Compare brass and plastic (slightly heavier) – copper increases the weight of the bridge to get you a little more durable, but it takes more energy (force of the chain) to get the sound going. The plastic is quite the opposite – Do not add much weight to the bridge of light scratching of the strings will go higher. There would be almost no difference in the sound that you mentioned. The other problem is sustainability – the bone that is harder to last longer – the faster wear ebony.
